Fernandina Beach or Amelia Island: which should our website say?

Both, deliberately. Visitors planning a trip search "Amelia Island"; locals and Google Maps use "Fernandina Beach". A site should carry both names in the places Google reads, name the neighbourhoods where relevant, such as Centre Street, the South End or American Beach, and the Google Business Profile should use the address as it appears on the map. We set it up so the same business appears for either search.

Our bookings come from out of state months ahead. Is local SEO even the right thing?

Partly. For inns, venues and rentals, the visitor is not searching from Fernandina, so the map pack matters less and organic pages that answer their planning questions matter more, along with photography, reviews they can read from afar, and a booking path that works without a phone call. We still keep the Business Profile in order, because the same guest searches locally once they arrive.

Can you build a site with online booking?

Yes. For most inns, tours and charters the right answer is integrating the booking platform you already use so it works cleanly on a phone and nothing leaks between the enquiry and the reservation. Where a business needs something the platforms do not do, we build it: we have shipped a custom booking backend for a luxury travel client.
